A diet high in fiber, grains, fruits and vegetables, low in fat, saturated, cholesterol, reduces risk of disease. In the stomach, dietary fiber can delay gastric emptying, and in the large intestine, softens and increases the size of the stool by absorbing water, increasing the bacterial growth and gas production. The inclusion of dietary fiber (DF) in the diet, has multiple benefits on human health, however, about the effects of FD on the physiology and health in childhood is poorly understood, and there is no epidemiological and experimental research on this, although there is increasing evidence to suggest the importance of dietary fiber and its possible contributions to health in the short and long term in children. The lack of an adequate amount of dietary fiber and their interactions with the digestive system is responsible for directly and indirectly a large number of diseases.
